Spicy chorizo beef burger with caramelised onions and smoky BBQ sauce.
Ingredients:
  • 600g beef mince
  • 1 chorizo, very finely chopped
  • 62.50 ml beer (optional)
  • 40.00 ml chopped fresh flat-leaf parsley leaves
  • 45.20 gm smokey barbecue sauce (see related recipe)
  • 27.30 gm olive oil
  • 6 rindless shortcut bacon rashers
  • 6 cos lettuce leaves, torn
  • 2 tomatoes, thinly sliced
  • 6 sesame hamburger rolls, split
  • Extra smoky barbecue sauce, to serve
  • Caramelised onion, to serve
  • Cucumber pickles, to serve
Instructions:
  • In a medium bowl, mix together the mince, chorizo, beer (if using), parsley, and smokey barbecue sauce. Season with salt and pepper. Divide the mixture into 6 equal portions and roll each into a ball. Shape into 1cm-thick patties and place on a large plate lined with baking paper. Cover and refrigerate for 1 hour to enhance the flavors.
  • Heat 1 tablespoon of oil on a hot barbecue or large frying pan over medium heat. Cook patties for 4 to 5 minutes on each side until golden and cooked through. Transfer to a plate, cover with foil, and let them rest for 5 minutes before serving.
  • Heat the remaining oil in a skillet. Cook the bacon in the skillet for 2 to 3 minutes, turning occasionally, until browned and cooked to your desired level of doneness.
  • Layer torn lettuce leaves, tomato slices, patties, and bacon on the bottom halves of the bread rolls. Drizzle with more Smoky barbecue sauce, add Caramelised onion, Cucumber pickles, and cover with the top halves of the rolls. Serve and enjoy!
