Beef, chorizo and semi-dried tomato sausage rolls

Impress a crowd with these savory homemade beef and chorizo sausage rolls infused with semi-dried tomatoes.
Ingredients:
  • 4.60 gm olive oil
  • 2 chorizo sausages, finely chopped
  • 5.00 gm smoked paprika
  • 1kg 3 Star Beef Mince
  • 50g semi-dried tomato
  • 70g tomato sauce
  • 40.00 ml finely chopped flat-leaf parsley
  • 70g breadcrumbs
  • 1 Free Range Egg, lightly whisked
  • 4 sheets frozen puff pastry, just thawed
  • 1 Free Range Egg, lightly whisked, extra
  • Sesame seeds, to sprinkle
  • 300g Fresh Mediterranean Salad Bowl, to serve
  • Tomato sauce, extra, to serve
Instructions:
  • Preheat your oven to a toasty 220C and prepare a baking tray by lining it with baking paper.
  • In a frying pan over medium heat, sizzle onion and chorizo in oil until golden and slightly caramelized, about 5 minutes. Sprinkle in paprika and sauté for an additional 2 minutes. Cool for 10 minutes before using.
  • Combine mince, tomato, tomato sauce, parsley, egg, breadcrumbs, and chorizo in a large bowl. Season generously and mix thoroughly until fully incorporated.
  • Lay out pastry sheets on a clean work surface. Cut each sheet in half to create 8 rectangles. Spoon one-eighth of the beef mixture along one long side of each rectangle. Roll up the pastry to seal the filling inside. Slice each roll in half and place them on a lined baking tray with the seam side down. Brush with egg wash and sprinkle sesame seeds on top. Bake for 25-30 minutes until golden and fully cooked. Serve the sausage rolls with salad and extra tomato sauce.
