Beef and Eggplant Casserole

Eggplant, beef, tomatoes, and cheese casserole - a simple, delicious baked meal.
Ingredients:
  • cooking spray
  • 1 medium eggplant, peeled and sliced into 1/4-inch rounds
  • 1 pinch salt, or more as needed
  • 1 cup cornmeal
  • 0.5 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 0.25 cup vegetable oil
  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 medium sweet onion, sliced
  • 2 teaspoons Italian seasoning
  • salt and ground black pepper to taste
  • 1 (15 ounce) can diced tomatoes
  • 1 cup shredded Cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • 1 cup shredded Parmesan cheese
Instructions:
  • Preheat the oven to 350°F (175°C) and generously spray an 8-inch square glass pan with cooking spray.
  • Lay eggplant slices on paper towels, sprinkle with salt, and cover with more paper towels. Let sit for 30 to 45 minutes to draw out moisture. Gently press down on the paper towels to remove excess moisture.
  • In a bowl, mix cornmeal, flour, paprika, cinnamon, and ginger. Coat eggplant slices in the mixture.
  • Heat vegetable oil in a frying pan over medium heat. Cook floured eggplant slices until golden brown on the edges but soft in the centers, about 3-5 minutes per side. Set aside once done.
  • 1. Preheat a large skillet over medium-high heat. Brown ground beef until cooked and crumbly, about 5-7 minutes. Stir in garlic, onion, Italian seasoning, salt, and pepper. Cook until onions are soft and translucent, about 3-4 minutes. Remove from heat and set aside.
  • Begin by arranging a layer of eggplant slices on the bottom of the pan. Next, add the ground beef, 1/2 can of diced tomatoes, 1/2 of the Cheddar cheese, and 1/2 of the Monterey Jack cheese. Repeat the layers, starting with the eggplant slices. Finally, coat any remaining eggplant slices with Parmesan cheese and place them on top of the casserole.
  • Bake until the cheese is gooey and bubbling, and the top is a golden brown, for 35 to 40 minutes in the preheated oven.
