Layered Beef and Eggplant for an irresistible explosion of flavor.
Ingredients:
  • Mixed salad, to serve
  • 1 medium eggplant, trimmed, cut into 4 slices
  • 4 large pieces chargrilled red capsicum
  • 4 beef fillet steaks, trimmed, char-grilled
  • 40.00 ml tomato passata
  • 4 thick slices mozzarella cheese
Instructions:
  • Preheat your oven to a cozy 180°C and prepare a baking tray by lining it with parchment paper.
  • Place the eggplant slices in a single layer on a microwave-safe plate and cover with plastic wrap. Microwave on high for 3 minutes until tender. Allow to cool before using.
  • Assemble each stack by alternating layers of eggplant, char-grilled capsicum, beef, and passata. Season generously and finish with a slice of luscious mozzarella cheese.
  • Arrange the stacks on the tray lined with parchment paper and bake for 10 minutes until they are heated through and the cheese is perfectly melted. Serve alongside a delicious salad.
