Spiced beef skewers with eggplant salad

Spicy beef skewers with zucchini & eggplant salad and tzatziki.
Ingredients:
  • 72.80 gm olive oil
  • 10.00 gm ground cumin
  • 20.00 ml ground coriander
  • 2 tsp finely grated fresh ginger
  • 5.00 gm smoked paprika
  • 1/4 tsp cayenne pepper
  • 800g beef round steak, cut into thin strips
  • Tzatziki dip or Greek-style yoghurt, to serve
  • 8 small (about 680g) Lebanese eggplants, ends trimmed, halved lengthways
  • 8 small (about 720g) zucchini, ends trimmed, halved lengthways
  • 2 red capsicums, halved, deseeded, cut into thick strips
  • 250.00 ml coarsely torn fresh basil
Instructions:
  • In a medium bowl, mix together oil, garlic, cumin, coriander, ginger, paprika, and cayenne pepper. Add beef strips and toss until fully coated in the spice blend. Thread beef strips onto skewers and place them in a glass or ceramic dish. Cover with plastic wrap and refrigerate for 3-4 hours to enhance the flavors.
  • Preheat the barbecue grill to medium-high. Grill the beef skewers, turning occasionally, for 8-10 minutes until fully cooked. Present the skewers on a serving platter.
  • For the eggplant salad, combine eggplant, zucchini, and capsicum in a large dish. Drizzle with oil and gently mix. Grill the veggies for 2-3 minutes per side until tender. Transfer to a serving bowl and mix in basil gently.
  • Offer the skewers and eggplant salad with tzatziki or yogurt, if preferred.
