Spiced beef skewers

Ingredients:
  • 200g (1 cup) Basmati rice
  • 125g (1/2 cup) natural yoghurt
  • 2 tsp garam masala
  • 1 small red onion, finely diced
  • 600g beef rump steak, trimmed, cut into 2cm pieces
  • 18.20 gm olive oil
  • 1 telegraph cucumber, cut into chunks
  • 4 large egg tomatoes, cut into thin wedges
  • 62.50 ml shredded fresh mint leaves
  • 42.00 gm fresh lemon juice
  • salt & ground black pepper, to taste
Instructions:
  • Prepare the rice as directed on the package. Soak 12 bamboo skewers in cold water for 10 minutes, then drain.
  • Mix together the yoghurt, garam masala, and half of the onion in a non-aluminium dish. Add the beef and coat well. Skewer the beef.
  • In a large heavy-based frying pan over medium heat, heat half of the oil. Add half of the beef skewers and cook for 3-4 minutes on each side until just cooked. Transfer to a plate and loosely cover with foil. Repeat the process with the remaining oil and beef skewers.
  • In a medium bowl, combine cucumber, tomatoes, mint, lemon juice, remaining onion, salt, and pepper. Toss the ingredients together until well combined. Serve the beef skewers with the rice and salad.
