Chef John's Guinness beef stew: A luxurious Irish dish with rich, complex flavor enhanced by dark beer gravy.
Ingredients:
  • 4 slices bacon, cut into small pieces
  • 2.5 pounds boneless beef chuck, cut into 2-inch pieces
  • 1.5 teaspoons salt, divided, or more to taste
  • freshly ground black pepper to taste
  • 2 onions, coarsely chopped
  • 1 (14.9 ounce) can dark beer (such as Guinness®)
  • 0.25 cup tomato paste
  • 3 carrots, cut into 1-inch pieces
  • 2 stalks celery, cut into 1-inch pieces
  • 4 sprigs fresh thyme
  • 1 teaspoon white sugar
  • 0.5 teaspoon freshly ground black pepper, or to taste
  • 2.5 cups chicken stock, or as needed to cover
  • 4 cups mashed potatoes
Instructions:
  • Fry bacon until golden and crispy in a heavy skillet over medium-high heat for about 3 to 4 minutes. Turn off the heat, then move the bacon to a large stew pot, keeping the bacon fat in the skillet.
  • Season the beef chuck cubes with 1 teaspoon of salt and black pepper to taste. Heat the skillet on high and sear the beef pieces in hot fat until browned on both sides, which should take about 5 minutes. Transfer the beef to the stew pot with the bacon, and keep the fat in the skillet. Reduce heat to medium, sauté the onions in the remaining fat until lightly browned for 5 to 8 minutes, and season with a generous pinch of salt.
  • Sauté onions and garlic until softened for about 1 minute. Deglaze the skillet with beer, scraping up any browned bits. Transfer the flavorful liquid to the stew pot. Add tomato paste, carrots, celery, thyme, sugar, black pepper, and sufficient chicken broth to cover all ingredients.
  • Bring the stew to a gentle simmer, ensuring everything is combined. Lower the heat to low and cover the pot. Let the stew simmer until the beef is fork-tender, approximately 2 hours. Stir occasionally and remove any fat or foam as needed.
  • Uncover and turn up the heat to medium-high. Bring the stew to a gentle boil and simmer until slightly thickened, about 15 to 20 minutes. Remove and discard thyme sprigs, then season with salt and pepper to taste.
  • Create a ring of creamy mashed potatoes in a serving bowl, then generously ladle the savory stew into the center of the potatoes.
