Beef and Guinness stew with whipped potatoes

Indulge in a rich and comforting beef Guinness stew for St. Patrick's Day.
Ingredients:
  • 60ml olive oil
  • 1.5kg beef blade or chuck steak, cut into 3-4cm pieces
  • 2 stalks celery, coarsely chopped
  • 2 carrots, coarsely chopped
  • 1 large onion, chopped
  • 50g sachet tomato paste
  • 20.00 ml plain flour
  • 250ml red wine
  • 440ml can Guinness
  • 750ml beef stock
  • 1 dried bay leaf
  • 200g bacon, cut into strips
  • 300g shallot
  • 150g button mushrooms
  • 1.5kg equal-sized desiree or king edward potatoes, peeled, halved
  • 100g butter, chopped
  • 250ml cream
  • Chopped flat-leaf parsley, to serve
  • Steamed green beans, to serve
Instructions:
  • Preheat the oven to 160°C. In a casserole dish over high heat, brown the beef in two batches in 1 tablespoon of oil. Set the beef aside. Add another tablespoon of oil to the dish and cook the celery, carrots, and onion for 8 minutes. Stir in the paste and flour, then cook for another minute. Pour in the wine and Guinness, and simmer until reduced by half. Add the stock and continue to simmer until reduced by half. Return the beef to the pan, add the bay leaf, and bring to a simmer.
  • Place a lid over the dish and bake in the oven for 2 hours until the meat is tender. Carefully take out the meat with a slotted spoon and keep it warm. In a small frying pan, heat the remaining oil over medium heat. Sauté the bacon and shallots for about 8 minutes until the shallots are soft. Stir in the mushrooms and cook for an additional 2 minutes until they are tender. Mix the bacon mixture with the cooking liquid and let it simmer over medium heat for around 30 minutes until it thickens. Finally, place the beef back in the dish and reheat before serving.
  • While the potatoes are steaming for 25 minutes until tender, prepare a creamy mixture by heating butter and cream until boiling in a separate pan. Once the potatoes are soft, mash them with electric beaters or a potato masher until smooth. Serve the stew over the fluffy potatoes, topped with parsley, along with a side of beans.
