Savory Guinness beef stew with hearty potatoes, slow-cooked and topped with flaky puff pastry for the ultimate cozy meal.
Ingredients:
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 3 pounds boneless beef chuck, trimmed and cut into 1 1/2-inch pieces
  • 0.25 cup vegetable oil
  • 1 large yellow onion, coarsely chopped
  • 1 (15 ounce) can Irish stout beer (e.g. Guinness®)
  • 4 cloves garlic, chopped
  • 1 (14.5 ounce) can beef broth
  • 1 tablespoon chopped fresh parsley
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 pound round red potatoes, halved
  • 3 carrots, cut into 1-inch chunks
  • 1 (17.5 ounce) package frozen puff pastry, thawed and cut into quarters
Instructions:
  • In a shallow dish, mix flour, salt, and pepper. Add beef pieces to the flour mixture and toss until evenly coated. Set aside the remaining flour mixture for later use.
  • In a spacious nonstick skillet, heat oil over medium-high heat. Brown beef on all sides in batches, cooking and stirring for about 10 minutes per batch. Transfer beef to a slow cooker.
  • Sauté onion in the skillet until golden, around 5 minutes. Stir in beer and garlic, boil for 1 minute while scraping up the flavorful bits from the pan. Transfer the onion mixture to the slow cooker.
  • Combine the beef broth, parsley, thyme, and bay leaves with the beef in the slow cooker.
  • Simmer the beef until almost tender for 2 1/2 to 3 hours. Stir in reserved flour mixture, then add potatoes and carrots. Increase the heat to High and cook until the potatoes are tender, about 1 hour.
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Cut puff pastry sheets into quarters and elegantly arrange on baking sheets; delicately pierce each square several times with a fork for perfect puff.
  • Bake in the preheated oven for about 10 minutes until golden and crispy. Serve the stew in individual dishes and garnish each with a pastry square.
