Tender corned beef brisket simmered in sweet Guinness sauce with potatoes and cabbage for a cozy meal.
Ingredients:
  • 1.5 (12 fluid ounce) cans or bottles Irish stout beer (such as Guinness®), divided
  • 1 (4 pound) corned beef brisket
  • 1.5 cups brown sugar
  • 3 sweet potatoes, cut into chunks
  • 1 head cabbage, cored and coarsely chopped
  • 2 large sweet onions, chopped
  • 6 large carrots, chopped
  • 3 red potatoes, cut into chunks
Instructions:
  • Add 1 bottle of rich Irish stout beer to the slow cooker.
  • Gently rinse the corned beef brisket, then pat it dry. Coat it all over, including the bottom, with brown sugar before placing it in the slow cooker with the stout beer.
  • Place the sweet potatoes, cabbage, onion, carrots, and red potatoes neatly over and around the brisket in the slow cooker.
  • Drizzle the rest of the Irish stout beer over the brisket and vegetables to enhance the sweetness of the brown sugar.
  • Cover the slow cooker and simmer on Low until the corned beef is tender, for about 6 to 8 hours. Let the brisket rest for 5 minutes before slicing.
  • Enjoy this dish while it's still hot!
