Slow-Cooker Irish Stout Beef Stew

Cozy up with a comforting Guinness beef stew featuring tender chunks of beef, caramelized onions, and a rich broth. Perfect for a delicious break from cold-weather favorites.
Ingredients:
  • 6 cups thinly sliced sweet or yellow onions (about 2 lb)
  • 2 tablespoons butter, melted
  • 3/4 teaspoon pepper
  • 2 cups Progresso™ beef flavored broth (from 32-oz carton)
  • 1/2 cup Gold Medal™ all-purpose flour
  • 3 lb beef stew meat
  • 2 tablespoons vegetable oil
  • 1 cup Guinness® Draught (from 12-oz can)
  • 1 lb baby Yukon Gold potatoes, scrubbed
  • 4 carrots, peeled and cut into 1-inch chunks
  • 1 teaspoon dried thyme leaves
  • 2 tablespoons finely chopped fresh parsley leaves
Instructions:
  • Lightly coat a 5-quart slow cooker with cooking spray.
  • Combine the onions, rich melted butter, a touch of salt, and a hint of pepper in a slow cooker. Pour in one cup of flavorful broth. Cook on Low heat for 8 to 10 hours until the onions are irresistibly tender and beautifully browned.
  • Combine flour, remaining 3/4 teaspoon salt, and remaining 1/2 teaspoon pepper in a large bowl. Add beef and toss to coat evenly. Discard any excess flour. In a 12-inch skillet, heat 1 tablespoon oil over medium-high heat and cook half of the beef for 5 to 7 minutes until all sides are browned. Transfer the beef to the slow cooker, and repeat the process with the remaining 1 tablespoon oil and the other half of the beef.
  • Pour the remaining 1 cup of broth into the skillet and bring it to a boil over medium-high heat, making sure to scrape up all the delicious browned bits on the bottom. Transfer everything to the slow cooker.
  • Combine Guinness®, potatoes, carrots, and thyme in the slow cooker. Gently mix together. Cover and cook on Low heat setting for 8 to 10 hours or until the meat is tender and the sauce has thickened.
  • Sprinkle with fresh parsley for a pop of color and flavor.
