Slow-cooked Irish beef stew with chuck, onions, carrots, and potatoes in a rich stout-infused broth for ultimate tenderness.
Ingredients:
  • 3 russet potatoes, diced
  • 1 pound baby carrots
  • 1 large onion, chopped
  • 1 tablespoon olive oil, or to taste
  • 2 pounds beef chuck roast, cubed
  • 1 (16 ounce) bottle stout beer, divided
  • 1 cup beef broth
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • salt and ground black pepper to taste
Instructions:
  • Add the potatoes, carrots, onion, and garlic to the slow cooker.
  • In a skillet over medium heat, warm up olive oil, then brown the beef by cooking and stirring for about 10 minutes. Transfer the beef to the slow cooker along with the vegetables.
  • Deglaze the skillet with 1/4 cup of beer, scraping up the flavorful browned bits with a wooden spoon. Stir in tomato paste and cook until thickened, about 5 minutes. Transfer the mixture to the slow cooker.
  • Add the remaining beer, beef broth, garlic powder, onion powder, paprika, salt, and pepper to the slow cooker.
  • Slow cook on Low until the potatoes and carrots are fork-tender, approximately 8 hours, or on High for 3 to 4 hours.
