Savory beef and lentil slices - simple, nutritious, and full of flavor.
Ingredients:
  • olive oil cooking spray
  • 2 slices soy and linseed bread
  • 2 small red onions
  • 2 carrots, peeled, trimmed
  • 450g extra-lean beef mince
  • 400g can lentils, drained, rinsed
  • 1 eggwhite, lightly beaten
  • 127.50 gm beef stock
  • 100g mixed baby salad leaves
  • 82.50 gm Baxters Tomato Chutney with Red Pepper, warmed
Instructions:
  • Preheat the oven to 180°C and generously spray a 5cm deep, 20cm square ovenproof dish with oil before pulsing the bread in a food processor until fine crumbs form.
  • Begin by finely chopping 1 onion and 1 carrot, then placing them in a spacious bowl. Add in the mince, 3/4 cup of lentils, egg white, and stock. Combine thoroughly. Press the mixture firmly into the dish and bake for 30 minutes or until fully cooked.
  • Preheat the grill on high heat and grill the slice for about 5 minutes or until nicely browned.
  • Thinly slice the rest of the onion and peel the remaining carrot into long, wide ribbons. Combine them in a bowl with salad leaves and the remaining lentils, then toss together.
  • Cut the slice into quarters, then plate it. Top each serving with salad and a dollop of chutney.
