Colorful lentils bring fiber and iron to this zesty side dish, perfect for pairing with soups, salads, or stews.
Ingredients:
  • 250.00 ml red lentils
  • 9.20 gm olive oil
  • 1 lemon, juiced
  • 2.50 gm ground cumin
  • 1/2 tsp ground coriander
  • 1.25 gm caster sugar
  • 1 small red onion, halved, thinly sliced
  • 150g grape tomatoes, halved
  • 100g baby spinach leaves
  • 4 beef scotch steaks or beef rump steaks
Instructions:
  • Firstly, rinse the lentils under cold water. Then, place them in a saucepan and cover with cold water. Bring to a boil over high heat, then simmer on low for 5 minutes until tender. Finally, drain and rinse the lentils under cold water.
  • In a small bowl, mix together oil, 1/4 cup lemon juice, cumin, coriander, and sugar until well combined.
  • In a bowl, mix lentils, onion, tomatoes, and spinach. Drizzle with dressing and toss until well combined.
  • Preheat a greased barbecue plate or chargrill over medium-high heat. Season the steaks with salt and pepper, then cook them for 2 to 3 minutes on each side for medium doneness or to your preference. Serve the steaks with lentil salad.
