Beef and Mushroom Pilaf

Elevate your beef and mushroom pilaf with flavorful Progresso® broth, ready in just 35 minutes for a taste of Asian cuisine.
Ingredients:
  • 2 tablespoons olive or vegetable oil
  • 1 pound beef boneless sirloin, cut into thin strips
  • 1/2 pound mushrooms, sliced (3 cups)
  • 2 cloves garlic, finely chopped
  • 1 cup uncooked basmati or regular long grain rice
  • 2 cups Progresso™ beef broth (from 32 oz carton)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dark sesame oil or vegetable oil
  • 1 medium red bell pepper, chopped (1 cup)
  • 4 to 6 medium green onions, sliced (1/2 cup)
Instructions:
  • Start by heating a generous amount of olive oil in a 10-inch skillet over medium-high heat. Proceed to cook the beef in the flavorful oil, stirring occasionally, until it achieves a delicious brown color. Remove the beef from the skillet for the next step.
  • Sauté mushrooms and garlic in a skillet for approximately 3 minutes, stirring occasionally, until mushrooms are golden brown.
  • Add rice to the skillet and gently mix it in. Pour in the broth, Worcestershire sauce, sesame oil, and bell pepper. Bring to a boil and then lower the heat. Place the beef back in the skillet. Cover and let it simmer without stirring for 15 to 20 minutes, until the rice is tender and the liquid is absorbed. Sprinkle with onions before serving.
