Create a tantalizing Indian feast with aromatic spices and an array of flavorful curries.
Ingredients:
  • 36.80 gm vegetable oil
  • 500g diced beef
  • 1 brown onion, sliced
  • 87.50 gm korma curry paste
  • 600g jap pumpkin, peeled, diced
  • 1 red capsicum, chopped
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 127.50 gm beef stock
  • Steamed Basmati rice, to serve
Instructions:
  • In a large saucepan over medium-high heat, sear one-third of the beef in 2 teaspoons of oil for 2 minutes. Transfer to a bowl and repeat in 2 more batches with the remaining beef, using oil as needed.
  • Drizzle the remaining oil into a saucepan over medium heat. Sauté the onion and garlic until softened, about 1 to 2 minutes. Add the curry paste and cook for 30 seconds until fragrant. Return the beef and its juices to the pan, then mix in the pumpkin, capsicum, tomatoes, and stock.
  • Lower the heat to medium-low, cover, and gently simmer for 10 minutes. Uncover and continue cooking for an additional 10 to 15 minutes until the meat is tender and the sauce has thickened. Season with salt and pepper, then serve alongside steamed rice.
