Introducing our shrinked-down savory beef curry recipe, ideal for a quick and delicious dinner for two.
Ingredients:
  • 27.60 gm vegetable oil
  • 250g diced beef
  • 1 small brown onion, sliced
  • 1 garlic clove, crushed
  • 56.00 gm korma curry paste
  • 300g jap pumpkin, peeled, diced
  • 1 small red capsicum, chopped
  • 200g canned diced tomatoes
  • 63.75 gm beef stock
  • Steamed basmati rice, to serve
Instructions:
  • In a large saucepan over medium-high heat, sear half of the beef in 2 teaspoons of oil for about 2 minutes. Transfer to a bowl and repeat with the remaining beef using another 2 teaspoons of oil.
  • Pour the rest of the oil into a saucepan. Add the onion and garlic and cook until softened, about 1 to 2 minutes. Mix in the curry paste and cook for 30 seconds until fragrant. Put the beef and its juices back into the pan, then add the pumpkin, capsicum, tomatoes, and stock.
  • Lower the heat, cover, and let it simmer for 10 minutes. Uncover and continue cooking for an additional 10 to 15 minutes until the meat is tender and the sauce thickens. Season with salt and pepper to taste. Serve with steamed rice.
