Grill beef and zucchini skewers for a simple and satisfying meal on a stick!
Ingredients:
  • 200g plain yoghurt
  • 2 tsp horseradish cream
  • 600g beef scotch fillet or beef rump steak, trimmed, cut into cubes
  • 240g zucchini
  • 340g onion
  • 36.40 gm olive oil
  • 40.00 ml red wine vinegar
  • 40.00 ml fresh oregano leaves
Instructions:
  • In a bowl, mix yoghurt and horseradish together, season with salt, cover, and refrigerate.
  • Skewer the beef, zucchini, and onion alternately onto 8 skewers and place them in a dish. Mix oil and vinegar in a jug, then drizzle over the skewers, ensuring they are well-coated. Cover with plastic wrap and chill in the refrigerator for 10 minutes to enhance the flavors.
  • Heat up your barbecue plate or chargrill over medium heat. Grill the skewers, turning occasionally, for 6 to 8 minutes until they are nicely browned and cooked to your preference. Place the cooked skewers on a plate and cover them with foil, letting them rest for 5 minutes before serving.
  • Coat skewers generously with fragrant oregano before serving alongside a creamy yogurt mixture.
