Fall weather favorite: Bean-free stovetop beef chili.
Ingredients:
  • 2 tablespoons coconut oil
  • 2 cups diced onion
  • 4 cloves garlic, minced
  • 2 pounds ground beef
  • 2 tablespoons ground cumin
  • 1.5 tablespoons unsweetened cocoa powder
  • 1 teaspoon ground allspice
  • 1 teaspoon ancho chile powder
  • 1 (6 ounce) can tomato paste
  • 2 cups beef broth
  • 1 (14.5 ounce) can fire-roasted diced tomatoes, undrained
Instructions:
  • In a large, deep pot over medium-high heat, heat coconut oil until shimmering. Add onions and cook until slightly browned, about 5 minutes, stirring with a wooden spoon. Add garlic and cook until fragrant, about 30 seconds.
  • - Crumble the ground beef into the pot and cook until no longer pink, about 5 to 7 minutes. - Add chili powder, cumin, cocoa powder, oregano, allspice, ancho chili powder, and salt, stirring until well combined. - Mix in the tomato paste and simmer for 1 to 2 minutes.
  • Combine beef broth, diced tomatoes with their juices, and water in a large pot. Mix thoroughly and bring to a boil. Reduce heat to low and simmer for 2 hours.
