Quick and delicious baked beef and cheese chimichangas ready in 15 minutes. Top with lettuce, salsa, and sour cream for a speedy dinner.
Ingredients:
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 0.5 teaspoon taco seasoning mix, or more to taste
  • 0.25 cup sour cream
  • 1 (4 ounce) can chopped green chilies
  • 2 tablespoons distilled white vinegar
  • 1 cup shredded Cheddar cheese
  • 0.25 cup margarine
  • 6 (7 inch) corn tortillas
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • In a skillet over medium heat, cook the ground beef, onion, garlic, taco seasoning, and oregano until browned, about 8 minutes, making sure to break up the meat as it cooks. Drain any excess fat. Stir in sour cream, chilies, and vinegar until fully combined. Remove the skillet from the heat and mix in the Cheddar cheese.
  • In a small skillet, gently melt the margarine over low heat. Dip each tortilla into the margarine for about 30 seconds until soft. Transfer the softened tortilla onto a baking sheet and fill with approximately 1/3 cup of the meat mixture. Fold the right and left sides of the tortilla over the filling, then the top and bottom, enclosing the filling completely to create an envelope. Place the tortilla seam side down on the baking sheet. Repeat the filling and folding process with the remaining tortillas.
  • Bake the tortilla in the preheated oven for about 15 minutes until it is crispy.
