Delicious baked Mexican beef and bean treats.
Ingredients:
  • 1 pound lean ground beef
  • 0.75 cup chopped onion
  • 0.75 cup diced green bell pepper
  • 1.5 cups whole kernel corn
  • 2 cups taco sauce
  • 2 teaspoons chili powder
  • 1 teaspoon garlic salt
  • 1 teaspoon ground cumin
  • 1 (16 ounce) can refried beans
  • 8 (12 inch) flour tortillas
  • 1 (16 ounce) package shredded Monterey Jack cheese
  • 1 tablespoon butter, melted
  • shredded lettuce
  • 1 tomato, diced
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a skillet over medium-high heat, sizzle the ground beef until nicely browned. Ditch any extra grease, then toss in the onion, bell pepper, and corn. Saute for 5 minutes until veggies are tender. Add the taco sauce, sprinkle in chili powder, garlic salt, and cumin. Stir until everything melds. Heat through, then turn off the heat and set aside.
  • 1. Begin by liberating the flavorful beans from their can and delicately spread them across the awaiting tortillas. 2. Indulge the tortillas with a generous portion of the savory beef mixture before sprinkling as much shredded cheese as your heart desires on top. 3. Carefully roll the tortillas into tempting cylinders and elegantly arrange them seam-side down on a baking sheet. 4. Finalize this culinary masterpiece by giving the tortillas a luscious brush of melted butter.
  • Bake until golden brown in the preheated oven, for about 30 to 35 minutes. Enjoy with a side of lettuce and tomato.
