Quick and delicious Mexican-inspired warm dip, perfect for a speedy appetizer during Mexican night.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1/2 cup diced yellow onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 2 cups shredded Mexican cheese blend (8 oz)
  • Tortilla chips, as desired
Instructions:
  • Preheat the oven to 400°F.
  • In a 10-inch skillet, sauté the beef and onion over medium-high heat for 5 to 7 minutes, stirring often, until the beef is cooked through. Lower the heat to medium-low and pour in the enchilada sauce. Stir and let it simmer for 1 minute.
  • Fold in the chopped chiles and incorporate 1 cup of cheese until smooth. Take the mixture off the heat.
  • Spread the mixture in a non-greased ovenproof dish like an 8-inch skillet, square pan, or baking dish. Sprinkle the remaining cheese on top. Bake for 5 to 7 minutes until the cheese is bubbly.
  • Enjoy these mouthwatering nachos alongside your preferred choice of crispy chips.
