Savory beef enchilada soup, creamy with cheese and served with tortillas and sour cream, can be slow-cooked or ready in minutes on the stove.
Ingredients:
  • 4 pounds ground beef, cooked and drained
  • 1 (28 ounce) can crushed tomatoes
  • 2 (14 ounce) cans beef broth
  • 1 (15 ounce) can kidney beans
  • 1 (15 ounce) can black beans
  • 1 (14.5 ounce) can enchilada sauce
  • 1 (12 fluid ounce) can sweet corn
  • 1 (4 ounce) can chopped green chilies
  • 2 (1.25 ounce) packages taco seasoning
Instructions:
  • Mix together the ground beef, tomatoes, broth, kidney beans, black beans, enchilada sauce, corn, chilies, and taco seasoning in a slow cooker until well combined.
  • Cook covered on Low for 8 hours or High for 4 hours.
