Beef goulash pot roast

Succulent slow-cooked beef goulash, a comforting one-pot meal bursting with flavor.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1.5kg beef blade roast
  • 1 brown onion, chopped
  • 2 celery stalks, chopped
  • 2 red capsicums, chopped
  • 7.50 gm smoked paprika
  • 1 tsp caraway seeds
  • 20.00 ml plain flour
  • 44.40 gm tomato paste
  • 400g can crushed tomatoes
  • 382.50 gm beef style liquid stock
  • 700g white baby potatoes (see notes)
  • 40.00 ml chopped fresh chives
  • 176.25 gm sour cream
  • Crusty bread, to serve (optional)
Instructions:
  • In a large heavy-based saucepan over medium-high heat, heat oil. Add beef and cook for 10 minutes, turning occasionally, until browned all over. Transfer to a plate.
  • Sauté onion, celery, and bay leaves in a pan until onion softens. Mix in capsicum, garlic, paprika, and seeds, cook until fragrant. Stir in flour to coat, followed by tomato paste. Mix in crushed tomato and stock, bring to a simmer, and season to taste.
  • Place the beef back in the pan and cover it. Lower the heat to medium-low and let it simmer for 1 hour and 30 minutes. Flip the beef, then add the potatoes around it as directed in the notes. Cover and cook for an additional hour, or until the beef and potatoes are tender. Garnish with chives and enjoy with sour cream and bread, if desired.
