Slow-cooked beef in rich Guinness® beer with bacon, mushrooms, and shallots for a hearty, delicious meal.
Ingredients:
  • 4 teaspoons vegetable oil, divided, or as needed
  • 12 shallots, peeled and left whole
  • 1 pound cubed beef stew meat
  • 1 tablespoon all-purpose flour
  • 1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
  • 2 onion, cut in half and sliced
  • 1 large garlic clove, crushed
  • 4 slices smoked streaky bacon, sliced into strips
  • 1.5 cups fresh button mushrooms
Instructions:
  • Start by warming up your slow cooker on the Low setting.
  • In a skillet over medium-low heat, cook shallots in 2 teaspoons of oil until lightly browned. Transfer to the slow cooker. Brown the beef on all sides in the same skillet for about 5 minutes. Mix in flour, pour in beer, and bring to a boil. Transfer the beef-beer mixture to the slow cooker.
  • Use a paper towel to gently clean the skillet, then pour in the remaining 2 teaspoons of oil. Sauté the onion until it becomes soft and translucent, approximately 5 minutes. Stir in the garlic and bacon and cook for an additional minute. Transfer this savory mixture to the slow cooker. Add the mushrooms and season well with salt and pepper before covering the slow cooker.
  • Slow cook until meat is tender and fully cooked, approximately 5 hours.
