Slow-Cooker Corned Beef and Cabbage

Celebrate any day with our delicious Slow-Cooker Corned Beef and Cabbage. Tender corned beef cooked in beer, paired with potatoes, carrots, and onions, topped with a flavorful applesauce Dijon sauce. Easy steps for a flavorful meal anytime.
Ingredients:
  • 4 medium red potatoes, unpeeled, cut into 1-inch pieces
  • 4 medium carrots, cut into 1-inch pieces
  • 1 medium onion, cut into 6 wedges
  • 1 corned beef brisket with seasoning packet (2 to 2 1/2 lb)
  • 1 can (12 oz) beer or nonalcoholic beer
  • Water
  • 8 thin wedges cabbage
  • 1/4 cup applesauce
  • 2 tablespoons Dijon mustard
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Arrange potatoes, carrots, and onion at the bottom. Place the corned beef on top and sprinkle with the seasoning packet. Pour in the beer and enough water to barely cover the corned beef.
  • Cover and simmer on low heat for 10 to 12 hours.
  • Take the corned beef out of the cooker and transfer it to a serving platter, covering it to keep warm. Add the cabbage wedges to the vegetables and broth in the cooker. Increase the heat to High, cover, and cook for an additional 30 to 35 minutes until the cabbage is crisp-tender.
  • In a small bowl, combine the sauce ingredients.
  • Slice the corned beef thinly across the grain. Use a slotted spoon to take the vegetables out of the cooker. Optionally, skim any fat from the cooking juices. Serve the vegetables with the juices and the corned beef with the sauce.
