Delicious slow cooker corned beef and cabbage, served with whole grain mustard. Perfect for St. Patrick's Day or any family dinner.
Ingredients:
  • 3 to 3 1/2 pounds cured corned beef, with spice packet
  • 1 medium white onion, quartered
  • 2 cloves garlic, peeled and left whole
  • 3 cups of water
  • 1 1/2 pounds new red potatoes, washed and chopped into 2-inch chunks
  • 1 medium (about 1 1/4 pounds) green cabbage, cut into sixths
  • 4 large carrots, peeled and cut into 2-inch slices
  • Whole grain mustard, for topping
Instructions:
  • To prepare the corned beef: Rinse the corned beef under cold water after removing it from the bag to remove any excess brine. Transfer the brisket, fat side up, into your slow cooker. Sprinkle the spice packet over the brisket, then add the onion and garlic. Pour in the water and cook on low for 8 hours or on high for 4 hours.
  • With 2 hours left to cook (1 hour on high), transfer the corned beef to a plate from the slow cooker. Place cut potatoes at the bottom, then return the brisket to the pot. Arrange cabbage and carrots around the beef, cover, and cook for the remaining time.
  • Once the potatoes are fork tender and a piece of brisket easily flakes off when pierced with a fork, use tongs to transfer the corned beef to a cutting board. Slice the brisket against the grain into 1/4 to 1/2-inch thick slices. Plate the brisket on a serving platter with cabbage, carrots, and potatoes. Keep warm in the slow cooker, if desired. Add whole-grain mustard for extra flavor. Store any leftovers in an airtight container for up to 3 days, then reheat in the microwave or oven. If you enjoyed the dish, please rate and comment below!
