Slow cook corned beef for a flavorful and effortless St. Patrick's Day feast.
Ingredients:
  • 10 baby red potatoes, quartered
  • 4 large carrots, peeled and cut into matchstick pieces
  • 1 onion, peeled and cut into bite-sized pieces
  • 4 cups water
  • 1 (4 pound) corned beef brisket with spice packet
  • 6 ounces beer
  • 0.5 head cabbage, coarsely chopped
Instructions:
  • Layer the potatoes, carrots, and onion in the base of a slow cooker. Arrange the brisket on top of the vegetables. Drizzle beer over the brisket and generously season with the spices from the packet before covering.
  • After 7 hours on High heat, add cabbage and continue to cook for an additional hour.
