Slow cooker corned beef with veggies, cabbage, spices, and beer for a flavorful and delicious meal.
Ingredients:
  • 0.5 pound baby carrots
  • 0.5 pound small yellow potatoes (such as Dutch Yellow® Pee Wee potatoes)
  • 1 sweet onion, cut into bite-size pieces
  • 4 cups water
  • 4.75 pounds corned beef brisket with spice packet
  • 3 tablespoons onion powder
  • 3 tablespoons garlic powder
  • 1 bottle Irish stout beer (such as Guinness®)
  • 1 medium head cabbage, quartered and leaves separated
Instructions:
  • Arrange the baby carrots, potatoes, and onion in a single layer at the base of the slow cooker, then add water.
  • Season the lean side of the brisket generously with onion powder and garlic powder. Place the brisket, seasoned-side down, on top of the vegetables. Pour beer over the brisket and sprinkle the spice packet on top. Cover and cook on Low for 10 hours.
  • Place the brisket on a cutting board. Mix in the cabbage with the liquid and vegetables in the slow cooker. Keep it covered and let it cook on High until the cabbage is tender, for about 30 to 45 minutes.
  • Thinly slice the corned beef and plate it alongside the flavorful cabbage mixture.
