Easy gourmet beef involtini for a showstopping meal.
Ingredients:
  • 4 beef schnitzels
  • 158.40 gm fresh ricotta
  • 16 fresh basil leaves
  • 200g chargrilled eggplant
  • 100g chargrilled capsicum
  • 27.30 gm olive oil
  • 400g green beans
  • 20.00 ml balsamic vinegar
  • 82.50 ml shaved parmesan
  • Crusty bread, to serve
Instructions:
  • Take each schnitzel and halve them horizontally. Gently flatten the meat using your fingers. Season with salt and pepper, then spread ricotta on top. Evenly distribute basil, eggplant, and capsicum on each piece. Roll them up and secure with skewers in a weaving pattern.
  • In a large non-stick frying pan over medium heat, heat 2 teaspoons of oil. Cook the beef rolls on all sides for 12-15 minutes until golden. Remove skewers carefully.
  • Steam the beans until vibrant green and slightly crunchy, about 2 minutes. Transfer to a bowl and mix with vinegar, oil, parmesan, salt, and pepper. Gently toss to coat evenly.
  • Slice the succulent beef rolls and arrange them with the crisp green beans on individual serving plates. Accompany with freshly baked crusty bread for a delightful meal experience.
