Delicious Italian-style beef rolls with fresh herbs and tomatoes.
Ingredients:
  • 8 x 70 g pieces of thinly sliced topside of beef
  • 50 g pine nuts
  • 4 cloves of garlic
  • a few sprigs of fresh thyme
  • a few sprigs of fresh rosemary
  • a few sprigs of fresh parsley
  • 70 g fresh breadcrumbs
  • 4 tablespoons raisins
  • 3 shallots
  • 100 ml white wine
  • 1 x 400 g tin of chopped tomatoes
Instructions:
  • - Preheat the oven to 160ºC/gas 2½. - Flatten the beef between 2 sheets of clingfilm with a rolling pin or meat mallet until thin. - Lightly toast the pine nuts in a dry frying pan. - Finely chop the garlic and herbs. - Mix pine nuts, breadcrumbs, three-quarters of the garlic, raisins, herbs, salt, pepper, and oil. - Stuff each beef slice with the mixture and roll tightly. - Brown the beef rolls on all sides in a heated pan with oil. - Add sliced shallots and remaining garlic, cook for 2-3 minutes. - Pour in wine and simmer until reduced by half. - Add tinned tomatoes, season, and boil. - Bake in the oven for 1-1½ hours until beef is tender and sauce is thick. - Serve with a green salad.
