Guam-style kelaguen: zesty beef ceviche with lemon juice "cooked" raw flank steak in an hour.
Ingredients:
  • 1.5 cups lemon juice, or as needed
  • 2 tablespoons soy sauce
  • Tabasco to taste
  • 2 pounds beef flank steak, very thinly sliced against the grain
  • 1 bunch green onions, thinly sliced
Instructions:
  • Combine lemon juice, soy sauce, and Tabasco in a large glass bowl. Mix in the beef and green onions, adding more lemon juice as needed to fully coat the beef.
  • Allow the bowl with the meat to rest at room temperature for 1 hour covered with plastic wrap until the meat changes into a grayish-brown color and looks cooked.
