Ingredients:
  • 1 stick of celery
  • 1 carrot
  • 1 raw beetroot
  • 1 red onion
  • olive oil
  • 1 clove of garlic
  • 500 g quality minced beef
  • 1 x 400 g tin chopped tomatoes
Instructions:
  • 1. Preheat the oven to 180ºC/350ºF/gas 5. Prepare celery, carrot, beetroot, and onion. Arrange vegetables on a tray, drizzle with oil, roast for 45 minutes to an hour until tender. 2. Heat a pan and add oil. Fry whole garlic until golden, then add mince and brown for 3 minutes. Pour in tomatoes and 500ml water. Bring to boil, then simmer for 1 hour until thickened. Discard garlic. 3. Blend roasted vegetables until desired consistency. Stir into the pan and serve.
