Wholesome and comforting minestrone soup packed with hidden veggies - perfect for picky eaters of all ages. Easy to make for anyone!
Ingredients:
  • 1 onion
  • 1 beef tomato
  • 2 sticks of celery
  • 2 carotts
  • 1 courgette
  • 1 small sweet potato
  • 1/2 butternut squash (neck-end)
  • 500 ml organic veg stock
  • 60 g dried pastina or broken up spaghetti/linguine
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Prep the onion, celery, carrots, courgette, sweet potato, and squash. Arrange on a roasting tray, drizzle with olive oil, and roast until soft. Transfer to a blender with boiling water and blend until smooth. Set aside a portion for your baby. In a pan, combine the remaining mixture with stock and seasonings. Add pasta and cook until tender. Serve with Parmesan cheese on top.
