Make delicious koftas in lavash bread with hummus and tabouli for a gourmet fast food experience at home.
Ingredients:
  • 40.00 ml pine nuts
  • 500g beef mince
  • 1 small brown onion, grated
  • 62.50 ml chopped fresh continental parsley
  • 1 garlic clove, crushed
  • 3.75 gm ground cumin
  • 1 egg, lightly whisked
  • Salt & ground black pepper
  • 18.20 gm olive oil
  • 4 pieces lavash bread
  • 1 200g container tabouli (Mum's Choice brand)
  • 1 250g container hummus
  • 20.80 gm mild chilli sauce
Instructions:
  • Toast the pine nuts in a small frying pan over medium heat until golden brown, stirring frequently. Combine the pine nuts, beef mince, onion, parsley, garlic, cumin, and egg in a medium bowl. Mix thoroughly by hand until well combined. Season with salt and pepper. Shape the mixture into 12 equal 6cm-long logs.
  • In a large frying pan over medium heat, heat oil until shimmering. Cook koftas, turning occasionally, for 8 minutes until they are golden brown and cooked through.
  • Lay down a piece of bread on each plate, then layer on the tabouli, koftas, hummus, and chili sauce for a delightful combination of flavors.
