Moroccan beef kofta flat buns

Whip up delicious Moroccan beef kofta in no time!
Ingredients:
  • 1 small red onion, halved
  • 500g No Added Hormones Beef 3 Star Mince
  • 20.00 ml harissa spice mix
  • 20.00 ml finely chopped coriander
  • 1 Lebanese cucumber, halved lengthways, seeded, thinly sliced
  • 1 tomato, chopped
  • 82.50 ml flat-leaf parsley leaves
  • 21.00 gm lemon juice
  • 4 Moroccan Harissa Flat Buns, toasted
  • 95g yoghurt
Instructions:
  • Finely chop half of the onion and thinly slice the other half.
  • Mix together the mince, flavorful harissa spice mix, fresh coriander, and chopped onion in a bowl. Shape tablespoons of the mixture into balls, gently press them down, and arrange them on a plate.
  • Preheat a large non-stick frying pan over medium heat. Give the patties a light spray of olive oil. Cook half of the patties for 2-3 minutes per side until they're golden brown and cooked to perfection. Place them on a plate, cover to preserve the warmth, and then cook the rest of the patties in the same manner.
  • Combine the sliced onion, cucumber, tomato, parsley, oil, and lemon juice in a bowl.
  • Place the buns on the serving plates. Spread the bun bases with yogurt, then add the patties and cucumber mixture on top. Season to taste before folding over the bun tops to serve.
