Moroccan beef skewers with jewelled couscous

Delicious Moroccan beef skewers served with flavorful vegetable couscous for a perfect family dinner.
Ingredients:
  • 800g Beef Rump Steak, thinly sliced
  • 20.00 ml Moroccan seasoning
  • 36.40 gm olive oil
  • 1 red onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 375ml chicken stock
  • 120g pea
  • 300g couscous
  • 250g pkt Love Beets Baby Beetroot, finely chopped
  • 125.00 ml coriander, coarsely chopped
  • Coles Brand Greek Style Yoghurt, to serve
Instructions:
  • In a large bowl, mix together the beef, seasoning, and half of the oil until well combined. Thread the mixture evenly onto 12 bamboo skewers.
  • Preheat a large frying pan over medium-high heat. Cook the skewers, turning occasionally, for 5-6 minutes or until they are cooked through. Transfer the skewers to a plate and cover with foil. Let rest for 5 minutes before serving.
  • Next, pour in the remaining oil, onion, and carrot into the pan. Saute for 2 minutes until the onion softens. Pour in the chicken stock and peas and bring to a boil. Remove from heat, stir in the couscous, cover, and let it sit for 5 minutes until the liquid is absorbed. Fluff the grains with a fork, then mix in the beetroot and coriander. Divide onto plates, top with skewers, and serve with yogurt.
