Ingredients:
  • 600g beef stir-fry strips
  • 3 tsp Moroccan seasoning mix (see note)
  • 18.40 gm sunflower oil
  • 100g couscous
  • Zest and juice of 1 lemon
  • 1 small red onion, thinly sliced
  • 125.00 ml roughly chopped coriander
  • 62.50 ml raw almonds, roughly chopped
  • 150g thin green beans, trimmed, blanched in boiling salted water for 2 minutes, refreshed in cold water
Instructions:
  • In a bowl, mix together the beef, spice mix, and oil. Season with salt and let it sit for 3 minutes.
  • In a large bowl, combine couscous, lemon zest, and juice. Pour in 1/3 cup (80ml) boiling water, cover, and let sit for 4 minutes. Fluff the couscous with a fork, then mix in onion, coriander, almonds, and beans. Season to taste.
  • In a large non-stick frypan over medium-high heat, heat the oil. Cook the beef in two batches, tossing occasionally, until seared for 2-3 minutes. Serve the beef over couscous.
