Hearty beef, mushroom, and barley soup made with tender stew meat, onions, celery, and carrots - a soon-to-be family favorite!
Ingredients:
  • 2 pounds beef stew meat, cut into small pieces
  • 1 tablespoon vegetable oil
  • 1.5 onion, chopped
  • 3 stalks celery, chopped
  • 3 carrots, chopped
  • 7.5 cups beef stock
  • 8 ounces pearl barley
  • 1 pound mushrooms, sliced
Instructions:
  • Brown the beef stew meat in a large skillet over medium heat for 5 to 7 minutes until fully cooked; then transfer to a large soup pot.
  • In the same skillet, sauté onion, celery, and carrot in hot vegetable oil over medium heat until onions are tender, about 5 minutes. Transfer the vegetable mixture to the pot with the beef.
  • Add the flavorful beef stock to the pot.
  • Mix the pearl barley into the flavorful stock.
  • Simmer soup over gentle heat, stirring occasionally, until beef is fork-tender, approximately 2 hours.
  • Incorporate the mushrooms into the soup and simmer for an additional hour.
