Vietnamese noodle soup, known as Pho, a flavorful staple enjoyed any time of day.
Ingredients:
  • 1.5L (6 cups) beef consomme or beef stock
  • 2 star anise
  • 60ml lime juice
  • 48.80 gm fish sauce
  • 375g pkt rice noodles
  • 650g beef fillet, excess fat trimmed
  • 200g bean sprouts
  • 4 green onions, ends trimmed, thinly sliced diagonally
  • 2-4 small fresh red chillies (or to taste), thinly sliced
  • 250.00 ml Thai basil leaves
Instructions:
  • In a medium saucepan over high heat, mix beef consomme or stock with cinnamon stick and star anise. Bring to a boil, then lower heat to medium and simmer for 5 minutes until fragrant. Add lime juice and fish sauce, stirring well.
  • Boil rice noodles in a large pot of water until perfectly tender. Drain thoroughly.
  • Thinly slice beef into 5mm-thick slices. Preheat a barbecue or chargrill pan on high heat and lightly oil. Cook 1/3 of the beef for 1 minute on each side for rare, or until desired doneness. Transfer to a plate and repeat with the remaining beef in 2 more batches.
  • Distribute noodles into serving bowls. Add bean sprouts, green onion, chili, basil, and beef on top. Pour hot stock over the ingredients. Serve with additional lime, chili, and fish sauce on the side.
