Whip up a speedy beef pho in 25 minutes with only 5 ingredients for a perfect weeknight meal.
Ingredients:
  • 750g No Added Hormones Beef Rump Steak
  • 1l beef
  • 1 bunch Asian Pak Choy, quartered
  • 250g rice noodles or 340g pkt Asia Vermicelli Rice Noodles
  • 82.50 ml coriander sprigs
Instructions:
  • 1. Preheat a spacious non-stick frying pan over high heat. Sear the beef for 2-3 minutes on each side for medium doneness or to your preference. Allow it to rest for 5 minutes before slicing thinly.
  • In a large saucepan, bring the stock to a boil over medium heat. Remove from heat and stir in the pak choy until it just wilts.
  • Cook the noodles according to package instructions, then drain. Serve the noodles in bowls, pour the broth and pak choy over them, top with the beef, and finish off with a sprinkle of coriander.
