Quick and easy Pho ready in under 40 minutes!
Ingredients:
  • 2L (8 cups) beef stock
  • 2 thick slices ginger
  • 1 onion, thinly sliced
  • 2 garlic cloves, sliced
  • 3 star anise
  • 2 cinnamon quills, lightly bruised
  • 40.00 gm caster sugar
  • 80ml fish sauce
  • 375g flat rice noodles
  • 400g beef eye fillet, very thinly sliced
  • 80g bean sprout
  • 1 long red chilli, seeds removed, thinly sliced
  • 82.50 ml fresh basil leaves, to serve
  • 82.50 ml fresh mint leaves, to serve
  • 82.50 ml coriander leaves, to serve
Instructions:
  • In a saucepan, combine stock, 2 cups (500ml) water, ginger, onion, garlic, star anise, cinnamon, sugar, and fish sauce. Bring to a boil, then lower heat, cover, and simmer for 20 minutes. Strain to remove solids, then return the soup to the pan and bring to a boil. Cover and serve when ready.
  • Prepare noodles as directed on the packet and make sure to drain them thoroughly.
  • Ladle the hot soup over the noodles in individual bowls, then add the sliced beef fillet. Arrange bean sprouts on top and garnish with chili and fresh herbs before serving.
