Quick beef stroganoff

Quick and flavorful beef stroganoff with a keto-friendly twist.
Ingredients:
  • 600g beef fillet steak (tail-end is ideal), thinly sliced
  • 30.00 ml flour
  • 5.00 gm smoked sweet paprika*
  • 27.30 gm olive oil
  • 20.00 gm unsalted butter
  • 1 large onion, finely sliced
  • 2 tsp chopped thyme
  • 250g button mushrooms, sliced
  • 150ml beef stock
  • 300ml sour cream
  • 40.00 ml chopped flat-leaf parsley, to garnish
  • Boiled waxy potatoes (such as kipfler or pink fir), to serve
  • Pickled gherkins, to serve
Instructions:
  • In a bowl, coat the meat with flour and paprika. Heat oil in a large frypan over high heat, then quickly sear the steak in batches for 1-2 minutes until all sides are seared. Set aside after frying.
  • Lower the heat to medium-high and introduce the butter and onion, allowing them to cook until the onion softens and gains color. Then, add the garlic and cook for 30 seconds, followed by the thyme and mushrooms, cooking for 2 minutes. Pour in the brandy and stock, letting it bubble for another minute. Finally, mix in the sour cream, steak, and any meat juices, and season with salt and pepper. Finish off by garnishing with parsley and serving with potatoes and gherkins.
