Quick and decadent beef stroganoff ready in 25 minutes.
Ingredients:
  • 40.00 ml plain flour
  • 700g beef rump steak, trimmed, thinly sliced
  • 40g butter, chopped
  • 27.30 gm olive oil
  • 1 large brown onion, halved, thinly sliced
  • 2 garlic cloves, finely chopped
  • 1.25 gm sweet paprika
  • 400g button mushrooms, sliced
  • 125.00 gm dry white wine
  • 191.25 gm beef stock
  • 44.40 gm Tomato Paste
  • 17.70 gm dijon mustard
  • 62.50 gm creme fraiche (see note)
  • Cooked fettuccine, to serve
  • Chopped fresh flat-leaf parsley, to serve
Instructions:
  • Combine the flour and beef in a snap-lock bag, then season with salt and pepper. Shake well to evenly coat the ingredients.
  • In a large frying pan, melt half of the butter with 2 teaspoons of oil over high heat until sizzling. Add half of the beef and cook, stirring occasionally, for 3 to 5 minutes until nicely browned. Transfer the cooked beef to a plate. Repeat the same process with the remaining butter, 2 teaspoons of oil, and the rest of the beef.
  • Once the onion and mushroom are sautéed until soft, stir in garlic and paprika. Add wine, stock, tomato paste, mustard, and beef to the pan. Bring to a boil, then simmer on low for 5 minutes until slightly thickened.
  • Incorporate creme fraiche and serve the stroganoff with pasta and parsley.
