Skinny Slow-Cooker Beef Stroganoff

Chef Cheri Liefeld presents a lighter Slow Cooker Beef Stroganoff recipe on Adventures in the Kitchen.
Ingredients:
  • 2 lb boneless beef round steak, cut into 2 X 1/4-inch strips
  • 1 large onion, chopped (1 cup)
  • 2 cloves garlic, finely chopped
  • 1 can (18 oz) Progresso™ Vegetable Classics Creamy Mushroom Soup
  • 1 package (8 oz) sliced fresh mushrooms
  • 1/4 teaspoon pepper
  • 1 container (8 oz) reduced-fat sour cream
  • 6 cups hot cooked noodles or rice
Instructions:
  • Combine beef, onions, garlic, soup, mushrooms, and pepper in a 3 1/2- to 4 1/2-quart slow cooker.
  • Slow cook on low heat for 8 to 10 hours until the beef is extremely tender.
  • Combine the tangy sour cream with the savory beef mixture and generously ladle it over a bed of buttery noodles.
