Skinny Slow-Cooker Beef Tortilla Casserole

Indulge in a delicious and healthier twist on classic beef enchiladas, effortlessly cooked in the slow cooker.
Ingredients:
  • 2 cans (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 lb extra-lean (at least 95%) ground beef
  • 1 1/4 cups chopped onion
  • 2 medium poblano chiles, seeded, chopped
  • 2 cloves garlic, finely chopped
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 cup frozen whole kernel corn, thawed
  • 1 packet (1 oz) Old El Paso™ 25% Less Sodium Taco Seasoning Mix
  • 10 corn tortillas (6 inch)
  • 2 cups shredded reduced-fat four-cheese Mexican cheese blend (8 oz)
  • 1/4 cup chopped fresh cilantro
  • Light sour cream
  • Chopped fresh tomato
  • Lime wedges
Instructions:
  • Prepare a welcoming canvas by greasing a 5-quart oval slow cooker with cooking spray. Layer the flavor foundation by gently spooning 1/2 cup of enchilada sauce into the bottom of the slow cooker, ensuring even coverage. Keep 1/2 cup of enchilada sauce reserved in a small bowl for later use.
  • In a large skillet, sauté beef, onion, poblano chiles, and garlic over medium-high heat for 5-7 minutes until beef is cooked through. Drain any excess oil. Add the rest of the enchilada sauce, black beans, corn, and taco seasoning mix. Cook for another 3 minutes until warmed through. Remove from heat.
  • Lay 1 tortilla in the center of the slow cooker. Cut another tortilla in half and place each half on opposite sides of the whole tortilla. Spoon 1 1/3 cups of beef mixture over the tortillas and sprinkle 1/4 cup of cheese on top. Cover with 2 more tortillas, cut to size. Repeat the layers thrice with beef mixture, tortillas, and cheese. Finish by topping with the remaining 1/2 cup of sauce.
  • Cover and simmer on Low heat for 3 hours. Top with the remaining 1 cup of cheese. Turn off the slow cooker, cover, and allow it to sit for about 15 minutes until the cheese melts. Garnish with fresh cilantro before serving.
  • Garnish with your favorite toppings and enjoy promptly.
