Revamp your breakfast with a healthier twist using a slow cooker! Enjoy a savory sausage and egg casserole - perfect for any meal of the day.
Ingredients:
  • 12 eggs
  • 3/4 cup canned evaporated low-fat 2% milk
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
  • 1/2 cup chopped green onions (4 medium)
  • 1 cup shredded reduced-fat Colby-Monterey Jack cheese
  • 1 bag (20 oz) refrigerated cooked shredded hash brown potatoes
  • 1 package (9.6 oz) refrigerated cooked turkey sausage crumbles
  • 1/2 cup chopped roasted red bell peppers (from a jar)
Instructions:
  • Prepare the 5-quart oval slow cooker by lining the sides with foil folded into thirds and then spray with cooking spray.
  • In a medium bowl, whisk together eggs, milk, pepper flakes, salt, and pepper. Set aside 3/4 cup Cheddar cheese and 2 tablespoons green onions in the refrigerator. In a small bowl, combine the remaining cheeses.
  • Create a beautiful alternating pattern in the slow cooker by layering half of the potatoes, sausage, roasted peppers, green onions, and cheese. Repeat the layers for a hearty and delicious meal. Carefully pour the egg mixture over the layers to bind everything together.
  • Cover and simmer gently over Low heat for 4 to 4 1/2 hours until the center reaches 160°F and the egg mixture is fully set.
  • Switch off the slow cooker. Sprinkle the remaining cheese and green onions on top of the casserole. Let it sit covered for 10 minutes, or until the cheese is melted. Just before serving, remove the foil by gently loosening the edges with a table knife and pulling it out.
