Create a flavorful beef poke bowl with just 5 ingredients for a quick and healthy weeknight meal.
Ingredients:
  • 200g jasmine rice
  • 2 No Added Hormones Beef Scotch Fillet Steaks
  • 2 limes
  • 400g pkt Pokeslaw Kit
  • 1 avocado, stoned, peeled, sliced
Instructions:
  • In a saucepan, bring together the rice and 1 1/2 cups (375ml) water over high heat until boiling. Lower the heat, cover, and simmer for 10 minutes until the rice is tender and liquid is absorbed. Let it sit covered for 5 minutes to steam, then fluff the grains with a fork.
  • Preheat a greased barbecue grill or chargrill on high heat. Grill the steaks for 3 minutes on each side for medium doneness or to your preference. Place on a plate, cover with foil, and let rest for 5 minutes. Slice thinly before serving.
  • Juice 1 lime and add it to the dressing from the salad kit in a small bowl. Stir well to combine. Cut the remaining lime into wedges.
  • Spoon the rice into bowls. Layer with steak, salad kit vegetables, and avocado. Drizzle with the dressing. Sprinkle with the seed mixture and serve with lime wedges.
