Savor a flavorful slow-cooker pot roast with minimal effort.
Ingredients:
  • 2.5kg beef topside roast
  • 700g chat potatoes, halved
  • 3 large carrots, peeled, cut into 3cm pieces
  • 8 eschalots, peeled, halved
  • 2 dried bay leaves
  • 4 sprigs fresh thyme
  • 400g can diced Italian tomatoes with oregano and basil
  • 3 garlic cloves, crushed
  • 637.50 gm beef stock
Instructions:
  • Add the beef to a 5.5 litre slow-cooker, then surround it with potatoes, carrots, eschalots, bay leaves, and thyme. Season with salt and pepper. Mix tomato, garlic, stock, and 1 cup of cold water in a jug, then pour over the ingredients in the slow-cooker. Cover with the lid.
  • Set the cooker to low heat and simmer for 8 hours or until the vegetables are tender, remembering to flip the beef midway through cooking.
  • Place the beef on a plate, cover loosely with foil, and set aside for 10 minutes to rest. Slice thinly and serve with vegetables and sauce.
