Tender, melt-in-your-mouth chuck roast cooked to perfection in the oven in just 2 hours with this easy one-pot recipe.
Ingredients:
  • 2 teaspoons olive oil
  • 4 pounds boneless chuck roast
  • 1 onion, chopped
  • 2 bay leaves
  • 0.5 teaspoon freshly ground black pepper
Instructions:
  • Prepare all the necessary ingredients.
  • Preheat the oven to a toasty 325 degrees F (165 degrees C).
  • Preheat a Dutch oven or heavy pot until hot. Add oil and sear meat in the center for 4 minutes. Flip meat using tongs and sear for 3-4 minutes on each side. Take meat out of the pot.
  • Layer the aromatics of onion, garlic, and a bay leaf at the base of the pan; season with salt and pepper. Nestle the meat back into the pan, top with the last bay leaf, and cover to further enhance the flavors.
  • Roast in a preheated oven for 30 minutes, then lower the temperature to 300°F (150°C) and cook until tender for approximately 1 1/2 hours. Ensure a 145°F (65°C) internal temperature with an instant-read thermometer.
  • Place the roast on a serving platter and allow it to rest for 10 to 15 minutes. Then, slice the roast and garnish with onions and gravy.
